Nan’s Napkin Pancakes

2 cups flour

1 tsp. salt

1 tsp. baking powder

2 eggs

2 cups milk

sour cream

 

                       Put all ingredients in a bowl and mix                   thoroughly. The batter should be very thin.
        Heat a lightly greased skillet.Spoon in 2 tbsp.
of batter; lift and tilt the skillet to spread
batter (pancake must be thin). 
        Fry quickly, turn over. Put tbsp. of butter in center of pancake. Fry briefly. Fold pancake
in half, then fold in half again.

 

Can be topped with either butter, sour cream or jam.

 

Serves 4

 

Best with just butter inside and topped with a little butter and lots of sour cream. Nice light summer dinner.
Or any season for that matter!
