Hommemade Ice Cream

4 cups milk

2 tbsp. cornstarch

2 cups sugar

4 eggs

3 cups thin cream

2 tsp. vanilla extract

sweat (do not mix into)

 

Scald 3 cups milk in double boiler. Add 2 tbsp. cornstarch which has been mixed with 2 cups sugar and a few grains salt, cook 15 minutes. Beat 4 eggs with 1 cup milk. Stir into hot mixture and cook about 13 minutes or until mixture coats the spoon. Remove from heat and cool, add 6 cups thin cream and 4 tsp. vanilla extract.

 

Freeze in crank freezer using 8 parts of ice to 1 part of ice cream salt.

 

Makes one gallon.

Must use hand-powered ice cream maker (not electric).

Taste is dramatically different.
